The best lasagna EVER!!!

I found this recipe in my free Kraft Food magazine and it is quite delicious and super easy to make! The first time I made it Andrew and I polished off a good portion of it in one sitting. Emma tried some today for the first time and seemed to enjoy it. The best part about the recipe is that you don't have to pre-cook the noodles. Pretty cool! So here it is.....

Super Easy Lasagna
1 lb. ground beef
1 egg, beaten
2-1/2 cups KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese, divided
1 container (15 oz.) Part Skim Ricotta Cheese
1/2 cup KRAFT Grated Parmesan Cheese, divided
1/4 cup chopped parsley
1 jar (26 oz.) spaghetti sauce (I use traditional Prego)
1 cup water
12 lasagna noodles, uncooked
PREHEAT oven to 350°F. Brown meat in large skillet on medium-high heat. Meanwhile, mix egg, 1-1/4 cups of the mozzarella cheese, the ricotta cheese, 1/4 cup of the Parmesan cheese and the parsley until well blended; set aside.
DRAIN meat; return to skillet. Stir in spaghetti sauce. Add water to empty sauce jar; cover with lid and shake well. Add to meat mixture; stir until well blended. Spread 1 cup of the sauce onto bottom of 13x9-inch baking dish; top with layers of 3 lasagna noodles, one-third of the ricotta cheese mixture and 1 cup of the sauce. Repeat layers twice. Top with remaining 3 noodles and the remaining meat sauce. Sprinkle with remaining 1-1/4 cups mozzarella cheese and remaining 1/4 cup Parmesan cheese. Cover with greased foil.
BAKE 45 min. Remove foil; bake an additional 15 min. or until heated through. Let stand 15 min. before cutting to serve.

Father's Day!

Although it was two weeks ago, I figured I should still post something about Father's Day. We started the weekend out with Daddy/Daughter pictures. They turned out really cute! Andrew got to pick out what they were both going to wear, he went for a Cubs theme....no big surprise there! On Saturday Andrew, Emma and I celebrated Father's Day by taking Andrew to get a massage. He was really excited when he finally figured out what he was getting. I think he enjoyed the massage and was super relaxed afterward. That night we got a babysitter and headed out to dinner and a movie to celebrate our anniversary early. Our dinner at Carabbas was EXCELLENT! The sever not so great, but we still enjoyed or slow paced meal and conversation. After dinner we went to Cantera 30 for a movie...Sex and the City. I had two free tickets and the movie was good, especially since it was free. Andrew's sister Sarah and her family came up from Atlanta late Saturday night to surprise Andrew's dad for Father's Day. We had a nice BBQ at our house on Father's Day.
Thank you Andrew for being the most amazing father to Emma that I could ever have dreamed of. She is so incredibly lucky to have you as her dad. I love the way you make her laugh, and how every time you walk into a room she lights up. I look forward to seeing you two grow together as Father and Daughter.

Pulte is doing "summer hours" this year which means Andrew works an extra hour everyday but gets every other Friday off. We're both pretty excited about him having the extra time off, especially since I'm home on Friday's too. We will actually get two whole days together-every other week.

Last Friday was his first one off so we invited The Brown's to go boating with us. Although it wasn't a gorgeous day it was good enough to go boating. On our way down to the river Graham told us the Morris launch was closed. We changed course and headed to another little known launch in Senneca. When we got there the ramp was open but there was too much debris to put in safely. So we headed back to our house to eat lunch and then decided to walk to the park. The park is actually at the clubhouse/pool for the Lakewood Springs nborhood. It was REALLY hot so we decided to check out the pool. We had a great time hanging out there and with the Brown's!

We went to the park last Sunday for a picnic lunch and then some swinging and sliding. I had been to this park once with my play group and liked it becuase it had baby swings and some bigger trees. We stopped at Jimmy Johns (yum!) to pick up some sandwiches and then headed to the park, which is only 1 minute away from the JJ...perfect, but very dangerous! It was a beautiful afternoon and I had so much fun watching Emma and Andrew.

Emma has officially perfected the art of crawling! She is all over the place these days. I'm amazed by how quickly she went from wobbly to moving pretty quick. She started really crawling about one week ago yesterday and is all over the house now. Emma is also pulling herself up on things, including Mommy. It's so much fun to see her exploring the house and getting into new things.
